There are different species of coffee beans. However, among these species, two are popularly cultivated, namely, the robusta and coffee Arabica. When the coffee fruits are ripe, they will be harvested or picked and then processed. The processed seeds will be allowed to dry properly before they are roasted. The extent they will be roasted depends on the flavor that is desired. After the roasting the seeds are now ground. At this point it is ready for brewing.

There are several stages involved in the processing of coffee. Besides the above, there are also processes involved in the decaffeination of the coffee before it can be taken. There is the Swiss water process which is a method of decaffeinating the green seeds of coffee by soaking them in water. The brewing and drinking of coffee did not start today. It has been around for many centuries. The energizing effect of the bean plant of coffee was believed to be first discovered by the Ethiopians, though there is no record evidence to substantiate this claim. It was apocryphal writing that circulated in the 1671 that told the story of Kaldi an Ethiopian goatherd of the 9th century. According to the story, he was the first to discover the energizing effect of coffee bean plant. The story lacks historical credence as there is no evidence indicating any place where coffee was grown in Africa or Africans using it as stimulant.

In another account, coffee was accidentally discovered by Sheik Omar. Omar has healing power. He could cure diseases through prayers. However, it happened that he was banished from Mocha. During this period of banishment Omar was staying in desert’s cave located close to Ousab. As he was starving, he saw a berry from shrubbery and ate some. However, the berry was bitter. In order to reduce the bitterness he roasted the berries and they became harder. He now boiled them in order to soften them. He took the fragrant liquid that resulted from the boiling and the liquid was able to reinvigorate and sustain him for many days. The news got to Mocha. He was brought back to the land and was made a saint. The beverage was then taken to Egypt and Yemen and from there it got to the Arab countries.

The above two accounts have no historical credible evidence. The first known historical account with historical evidence of the cultivation of coffee can be traced to the Sufi Monastery in Yemen. There is historical evidence to show that coffee beans was roasted in this monastery and also brewed in the manner it is done today. According to the record, the brewing of coffee in the monastery started in the middle of 15th century and by 16th century already, the practice has spread to the entire Middle East, Turkey, Persia and North Africa.

According to history record, Yemen first imported coffee from Ethiopia and started growing it in their land. However, later in history, Sufi Baba Budan smuggled some coffee beans to India in 1670. The smuggled coffee seeds were first cultivated in Mysore. With this act of Sufi Baba Budan, coffee started spreading to other parts of the world. It got to Italy and from Italy to the rest of the entire Europe. Later it spread to the American world and Indonesia.

As coffee was imported to Italy from the Muslim world, there was appeal from various corners for the Pope to ban it because it was taken to be a Muslim drink. However, the consumption of coffee was totally embraced in Italy when Pope Clement VIII declared it a Christian drink in 1600. Thus in 1645, the first coffee house in Europe was started in Italy. However, the importation of coffee in a larger scale was begun by the Dutch. The Dutch even started growing coffee in Indonesia precisely in Java and Ceylon. Later in history, coffee became widely known in England thanks to the British East India Company’s effort.

Many years ago, there is a legend that originated in the Ethiopian highlands called the Kaldi legend. Though the time period is not precise, there is no doubt to the existence of legend, though the truth behind it is not yet confirmed. The legend rotates around Kaldi, an Ethiopian who is the person said to have discovered coffee. The legend states that while he was out grazing his goats, he discovered that they became unusually active and spirited whenever they ate berries from certain trees. After getting surprised by this behavior, he decided to pass this message on to the abbot of his monastery. The abbot decided to hear Kaldi out and he went to fetch the berries and made a drink out of them. With much excitement, the abbot spread the word around to the other monks he worked with, and within no time word had spread around and everyone was interested in the berries.
